What is decanting and why is it important?
Decanting wine and carafing wine are similar, but serve different purposes.
Decanting involves carefully pouring—usually an older red wine—into a decanter, leaving the sediment (or lees) behind in the bottle. This results in a clear, clean wine without any bitter notes. First, stand the bottle upright so the sediment sinks to the bottom and pour slowly, perhaps using a light behind the neck to see when the sediment has been reached.
Decanting is all about aerating wine. Younger wines, in particular, benefit from extra oxygen, which allows aromas to unfold more quickly and the flavor to become softer and more rounded. Use a wide-bottomed decanter for maximum oxygen contact.
Light wines often require 15 to 30 minutes of decanting, while full-bodied red wines need 45 to 90 minutes to breathe.
